The editorial staff of Dijon Capitale therefore decided to set the record straight and to slash a few bottles. [...] The setting was perfect: the Louis Bouillot House and its tastefully restored glass roof in Nuits-Saint-Georges, ideal for the most delicious tastings. All that was needed was a chef and a food and wine pairing specialist to set the proposal to music. We found them in the kitchens of the Hostellerie Cèdre & Spa in Beaune: the Michelin-starred Jordan Billan and his head sommelier Benjamin Maillet.
